Open up, Cacao! #4 Cacao Pairing

Actually, sake also pairs well with chocolate. In particular, kijoshu, a type of sake brewed with sake instead of water to create a rich sweetness, is an exceptional match! So this time, we paired kijoshu from Nanbu Shuzo, the brewery that produces the famous Fukui sake "Hanagaki," with chocolate from Minimal, a pioneer of bean-to-bar chocolate in Japan. The aromas of sake and cacao gently meet in your mouth.

After three years of aging, it has developed a rich sweetness, a balanced acidity, and a beautiful amber color. The clean, refreshing finish, characteristic of youthful aging, is also a major draw.
