Cheese that pairs well with Madame Hisada's premium sake

Madame Hisada
He is the owner of Fromagerie Hisada, which has its main store in the 1st arrondissement of Paris, the home of cheese, and is a certified cheese affineur by the Guild des Fromagers, an international cheese association.
Sanae Hisada, also known as Madame Hisada, is a familiar face at Isetan as the owner of Fromagerie Hisada. She is the first Japanese person to receive the highest rank of "MAITRE FROMAGERS" for cheese affineurs in France, and in 2013 she received the French Order of Agricultural Merit, Chevalier, and in 2015 the Order of Agricultural Merit, Officier, making her a universally recognized international cheese expert.
The sweet and sour flavor and slight bitterness of the yuzu citrus pair surprisingly well with the smooth cheese.

■Chef's Selection
Madame Hisada has previously introduced authentic cheeses to Japan, but recently she has been gaining even more popularity by combining Japanese ingredients with cheese and introducing them in Paris, the home of cheese. The cheese she has created this time is a Brillat-Savarin sprinkled with yuzu peel. Its flavor pairs better with ginjo sake than wine, and this pairing is definitely worth experiencing.
