Trusting each other, we aim to go even further than the best we can express.
The star of this collaboration, making its debut, is a Junmai Daiginjo sake called "Dassai Migaki Sono Saki e Hayata." "Migaki" refers to the sake brewing process using rice polished to an unparalleled 23%. "Hayata" is named after Professor Yasuyoshi Hayata (deceased) of Meiji University, who contributed to the development of a unique low-temperature pasteurization technology that reduces damage caused by heat.
In this collaboration, Dassai's top priority was ensuring the sake itself was delicious. "Migaki Sono Saki e" (Polishing Beyond), as the name suggests, represents the pinnacle of Dassai's evolution. To maximize its appeal, they used the "Dassai Hayata" technique, which involves injecting fine carbon dioxide bubbles to eliminate damage caused by heat sterilization.

"While inheriting traditional techniques, we aim to evolve by changing what needs to be changed. Even amidst this 'evolution,' which can be described as a cycle of destruction and creation, what never changes is the Japanese craftsman's spirit—that was our shared understanding. Combining a skull motif with the hand-painted label that we had already used for the existing 'Dassai Migaki Sono Saki e,' unifying the wrapping paper and string in black to make the most of black, which is also the identity of mastermind, and making the presentation box that remains after the sake is finished reusable as a trinket box—all of these ideas were born from the discussions at that meeting and were immediately adopted."
The special box, limited to 50 sets, contains a 2.3-liter bottle of "Dassai Migaki Sono Saki e Hayata," which Mr. Sakurai calls a "Japanese magnum bottle," along with a decanter and two glasses. The sake vessel, engraved with the iconic skull motif, and the gigantic bottle itself are custom-made items created from scratch in collaboration with a domestic glass manufacturer.
"The glass is reminiscent of a wine glass, but it's designed with a distinctly Japanese aesthetic in mind. Its shape allows aromas to accumulate easily, making it easy to appreciate the elegant fragrance of 'Dassai Migaki Sono Saki e Hayata,' and the thin rim makes it easier to perceive the sweetness. We were also particular about creating this high-quality glass in collaboration with a domestic manufacturer."
This collaboration brings together the finest quality sake, meticulously refined with a package that prioritizes only superior functionality and design, declaring "no embellishments or extras needed!" This fusion of Dassai, which focuses on the product itself rather than brand name or reputation, and MMJ's creativity is sure to cross paths with each other, helping customers discover new joys in life.
