Patisserie Kugrapin is run by Chef Teppei Sasaoka, who trained in Alsace, France, after working at renowned establishments such as Aigre Douce. As the name suggests, French pastries, including kugelhopf, are popular. The "Marron Marron," available only at the Shinjuku store, uses a flavorful chestnut cream and incorporates the popping taste of blackcurrant within a chestnut mousse.
