—I hear that your cooking embodies the spirit of your grandfather, John Kanaya.

Forty-five years ago, my grandfather opened a restaurant in Nishi-Azabu, Tokyo, named after his Christian name, called "Seiyo Zensho John Kanaya Azabu." It blended Japanese food culture with Western cuisine, service, and interior design, based on the theme of "French cuisine eaten with chopsticks." Sadly, it closed in 2004, but I carry on his spirit of wanting to "serve guests as if they were in my own home."

—What is that spirit?
